This was delicious and a favorite in my family! Instead of the oil (to follow the whole-foods plant-based style), I substituted the 1/3 cup of oil for 1/3 cup +1 tablespoon of applesauce. When measuring the granulated organic sugar, I only used 3/4 cup of the sugar versus adding the extra 2 tablespoons. (Note: I would even try experimenting with 1/2 cup for a lower sugar Lemon Poppy Seed muffin.) Also, since I did not have lemon extract on hand, I used extra lemon juice. With the adjustment of ingredients for the recipe, it eliminates the oil that often comes with baked goods (I am also oil-sensitive and other members in my family) and reduces a fraction of the sugar (although but 2 tablespoons of a difference). Making the Lemon Poppy Seed muffins was quite fun, simple, and the end product: delicious!
Note: If you decide to omit the oil like I did, know that the product tastes the freshest in the next couple of hours (between 2-5). By the end of the day, it does not hold up like other oil-filled baked goods (the functionality of oil is explained more thoroughly in the "Essential Vegan Desserts" course by Chef Fran Costigan).
