This simple raw chutney highlights the sweetness of fresh mango paste made from dried mangoes, and pairs perfectly with Indian-inspired dishes. Give it a kick by adding more chili.

This chutney is excellent paired with flatbread and Indian dishes, or try it out with Samosa Burgers (see Rouxbe recipe).
Mango Chutney will keep for 1 week in the refrigerator.

Preparing the Chutney
Ingredients
1 cup Mango Paste
3/4 cup fresh mango, diced
1 tbsp fresh ginger, minced
1 tsp fresh red chilies, seeded and minced
2 tbsp red onion or shallot (or to taste), sm dice
2 tbsp fresh cilantro, coarsely chopped
1 lime, juiced
Prepare the Mango Paste and place in small bowl. To prepare the chutney add all the ingredients and combine well.
Store in a sealed container.

This is delicious. I used the dried red chili flakes because I can't find any fresh red chilies right now. The ginger in this makes it really pop. About to make the Samosa Burgers. Yummerz!! Thank you, Rouxbe Crew!
Hi Zeal, You could dry fresh mango, on a silicone mat in your oven on the lowest setting. Just keep an eye on them and rotate from time to time. Best of luck. Cheers, Sandy
Hi Joe, The ginger can be omitted. If you would like a bit of the heat that ginger provides here, you could add a bit of shaved horseradish. Cheers, Sandy
Hi Ann: thanks for writing. Great question. Because the recipe contains raw cilantro and onions, and the recipe is not cooked. I personally would refrain from freezing, as the cilantro leaves would wilt. You can store the finished chutney for a week in the fridge. You may, however, want to freeze one ice cube's worth, and see how it works for you. From my experience, this chutney moves quickly, as everyone loves it! There are never leftovers! Cheers, Char
Where has this chutney been my whole life? I am preparing the Samosa burgers and therefore prepared this mango chutney... needless to say, I have to make a second batch of chutney because everyone keeps eating it with flatbreads
