Scrumptious Vegan Popcorn

Layered with coconut oil, nutritional yeast, salt and pepper, this fantastic popcorn is highly addictive. You have been warned!

*Note: Nutritional yeast can be found at most health food stores. Many grocery stores are also starting to carry it now as well. It can also be ordered online. For those interested, here is an article talking about the Health Benefits of Coconut Oil.

Ingredients

  • 3 tbsp coconut oil
  • 2 to 3 tbsp nutritional yeast
  • 1/2 cup popcorn kernels
  • sea salt, to taste
  • freshly ground black pepper, to taste
To start, melt 2 tablespoons of the coconut oil and set aside while you make the popcorn. To prepare the popcorn, heat your popcorn vessel as usual along with the remaining tablespoon of coconut oil. Once the oil is melted, add the popcorn kernels and cover with a lid. Pop the popcorn according to your machine or whichever vessel you are using. Note: We use an old-fashioned stove-top popcorn maker with a crank handle, with the heat set to medium. Once all of the popcorn has popped, carefully pour about a third of the popcorn into a large shallow bowl. Next, drizzle about a third of the coconut oil over the popcorn. Sprinkle with some of the nutritional yeast and season with salt and pepper. Pour another layer of popcorn, drizzle with oil and season again. To finish, pour out the remaining popcorn, drizzle with the remaining oil and season again with salt and pepper. Serve and enjoy! For added flavor, try adding a few drops of truffle oil to the melted coconut oil before you drizzle it over the popcorn.

    My daughter gave birth in March (2013) and she breast feeds the baby. Her lactation group makes these cookies which supposedly promotes increased nutritional quality of the breast milk. She bought a large canister of brewer's yeast (an ingredient) and has a lot left. Is brewer's yeast the same or similar to nutritional yeast? I'm not a vegan so these terms are rather new to me. However, I really do like pop corn!! I use coconut oil. This recipe would be an adventure to try. I'd hate to see all that yeast go stale!! Let me know w19485382@Yahoo.com . Williams

    Brewers does not taste the same as nutritional yeast — nutritional yeast has a mild cheesy, unami-like flavor to it, while brewer's yeast has quite a strong bitter taste to it. Here is a bit more information on the different yeasts and how they vary. Hope that helps. Cheers!

    This popcorn is the bomb! I've even been dreaming about it. I'll never use butter again - yuck! I think I'd miss the coconut and cheesy goodness of the nutritional yeast. Thanks, Rouxbe, for this one!

    Hi Daniel. I use a heavy bottomed pot with a lid. Stainless or ceramic work fine. Heat your pan, add the oil and kernels. Cover and turn up the heat to about medium. You will eventually hear popping slowly and then the popping will pick up the pace. Shimmy the pan from time to time. When the popping slows you can turn off the heat. Voila! Lauren
