Brigadeiro is a simple Brazilian chocolate candy and it is almost a national mania, being probably the most popular candy in Brazil.

Chef's notes

A dash of rum can also be added to the recipe to give it a rich taste similar to a tartufo tiramisu. Brigadeiro can also be used as a topping or covering for cakes, brownies, and fruits.

Making the brigadeiro.

Ingredients

  • 3 tablespoons of unsweetened cocoa (Nestle Quick or other chocolate powder)
  • 1 tablespoon of butter
  • 1 (14 ounce) can sweetened condensed milk
  • Chocolate sprinkles
Over medium-low heat, stir vigorously the three ingredients. Cook the mixture until it thickens enough to show the pan bottom during stirring (it will be firm enough to stay together and not spread). Pour into a greased dish and let cool to room temperature (or chill a few minutes in the fridge). Grease your hands with butter and take small amounts of candy and form into 1 1/2 inch balls. Roll the balls in chocolate sprinkles to decorate. If the balls don't hold their shape, cook an additional 5 minutes until it thickens up more.

    I add a half teaspoon of salt or a little more to balance the sweetness. Also to be used as a topping or covering it requires less time to get ready in order to be more fluid.

    Just a quick question: is it unsweetened cocoa powder or Nestlé's Quick that you use? Your recipe lists both... Thanks!

    Since this is a user generated recipe, I am not 100% sure of what was used. I was thinking that you may want to search a few other "Brigadeiro" recipes to see what the majority of those use. Here is a link to a quick search that I did https://www.google.com/search?q=Brigadeiro&oq=Brigadeiro&aqs=chrome..69i57&sourceid=chrome&espv=210&es_sm=119&ie=UTF-8 With that said, I am guessing that most of the recipes would call for unsweetened cocoa powder and not Nestle Quick. The original recipe I know Nestlé or Garoto chocolate powder, sweetened is used. Definitely no Nestle Quick or any sort of this mixtures. However, due its popularity, people may use whatever they have at home.
