Quick Ceasar Salad Dressing

You'll wonder why you bought this in a bottle when you see how easy it is to make.

Preparing the Dressing

Ingredients

  • 1 clove garlic
  • 1 anchovy filet (pureed)
  • 2 tsp worcestershire sauce
  • 2 egg yolks
  • 2 1/2 tsp Dijon mustard
  • 1/4 bunch fresh parsley
  • 2 tbsp lemon juice
  • 2 tsp red wine vinegar
  • 2 tsp freshly ground black pepper
  • 3 1/4 tbsp parmesan cheese
  • 1/2 extra virgin olive oil
  • salt and pepper (to taste)
Mince your garlic and finely chop the parsley then add them into the food processor where you've already added all the other ingredients except the oil and cheese. Blend these till well mixed. Now add the cheese and slowly introduce start adding the oil until you reach the desired consistency. This may mean you need more or less oil then stated in the ingredient list. Check the seasoning and add salt and pepper to taste.

    This is a great Caesar salad dressing. I have done this by hand in a wooden bowl with a slightly thinner consistency, but turned out very tasty. I try to omit machinery and practicing to do everything by hand. ( for my next Camping / Sailing trip) Another variety which I tried in order to reduce cholesterol; I have mixed the ingredient in a blender with egg white only but a bit more parmesan. It turned out really thick and tasty and I was complemented on the taste. Maybe try it one day? Munchamuncha Klaus S

    Nice recipe, any thoughts as to how long it can be stored in the fridge given the raw eggs? I tried this dressing on top of romaine with some capers and fried garlic slices (fry them slowly to avoid them going bitter and pat them dry with a paper towel), croutons and some shavings of aged parmesan and it was delicious! A great lunch or suppertime treat.

    It is best to make only what you need, but if there happen to be leftovers they will keep for 3-4 days, in a container with a tight-fitting lid.

    I like it over sliced tomatoes. It is a nice dressing. I plan on having it over other veggies as well. I am sure it is good on a salad too. I plan on trying it on a cold pasta salad as well.

    Tried this last night for a quick and tasty salad. I omitted the anchovy only because I didn't have one and added a little bit of cholula for a spicy kick. Thanks for the recipe Joe!

    Joe thanks for posting this. Could you please specify the amount of "1 pureed anchovies"? (i.e. 1 Tbsp/tsp/fillet/etc.) Cheers

    The recipe has been updated to be clearer. We use 1 anchovy filet (pureed); however, you can use more or less to taste if you like. Cheers!

    What are your thoughts on using anchovy paste from a tube? Buying a tin and using one fillet seems wasteful. Would there be a huge difference in flavour?

    You can always keep the anchovies in the refrigerator so there is no wasting them- they will keep for many months. As far as flavor, it honestly would be of minimal difference in this dish since you have so many other elements and bold flavors. I think either way will yield good results... good luck.
